Hi, I trying to set my document as follows.
=============================
1. Introduction Chapter
1.1 Intro Section 1
Figure 1.1
Table 1.1
1.2 Intro Section 2
Figure 1.2
1.2.1 Subsection
Figure 1.3
Figure 1.4
2. Approach Chapter
2.1 Approach Section 1
Figure 2.1
Table 2.1
E=mc^2 Eqn (2.1)
F=ma Eqn (2.2)
=============================
Something like that. I can get the section numbering (1, 1.1, 1.1.1) but I
don't know how to set up the figure, table, equation numbering.
I want the first number to follow the chapter number, then the second
increase by one and then restart after a chapter change.
Thanks in advance.

If you use the Insert | Caption feature, you have the option of including
the "chapter number," which will be picked up from the numbered heading you
designate.

That works.
But is there anyway to link the number in my text to the caption. So that
in the paragraph where I refer to the Figure, if the figure number changes,
it will update in the paragraph?

Insert | Cross-Reference (or Insert | Reference, Cross-Reference in Word
2003). Explore the options in the dialog to see what best fits your text.
Note that these will be fields that require a command (F9) to update rather
than auto-updating numbers like footnotes.

This would be perfect if the Cross reference was not the same format as the
Caption.
Can I make them different?

In what way do you want it to be different?

My caption is bold, followed by an un bold description. When inserting the
cross reference, it to is bold. This doesn't look nice in my paragraph,
having a bold cross reference.
I would like the cross reference to follow the formating of the paragraph,
not the cross reference.

You can usually straighten this out with a \* Mergeformat or \*Charformat
switch.
