Create the style by choosing New Style in the Styles & Formatting task pane.
In the TOF dialog, click the Options... button, check the box for "Style,"
and select the appropriate style. Of course, you can do the same thing
(albeit less simply) with a TOC.

I tried this, it seemed to work. I would STRONGLY recommend that Microsoft
publish the details for this as an alternative to using the Insert Captions.
It has the obvious advantage of being able to create a table of pretty much
anything.
I was able to create a Figure heading:
Figure {REF _number \r\h}-1<tab>Name
and mark it as style FigureCaption.
Then I set the Insert, Reference, Index & Tables, Options and checked the
CaptionFigure style. I unchecked the Lables and Numbers, and set Caption
Lable to NONE.
