I cannot find how to change the format of a Word label from address style
(left aligned) to  'product style' (centre alignment with varying font)

Labels by default are formatted with the normal paragraph style. Labels are
tables. You can apply any style you like to the content.
If you are using the envelope/labels dialog, select the label text in the
window and right click - and format the paragraph. Or create a new document
from that dialog and apply a style of your choice to the label text.
