Currently is black, yuch. How can I choose my own color
or at least change it? Will I be able to do this in all
apps of Office XP?

If under Tools>Options>General, you select Blue background, white text, then
text that you select will be highlighted in Yellow.

I don't know of any Office apps that you can do this in. It is a function of
your Windows setup, I think.
