I have several paragraphs of text already created and formatted. Then, I
select a line, a word, a paragraph and make one formatting change, when I
click apply or OK, the entire document takes the format change. Then, I
click the "Undo" arrow and the rest of the document returns to its previous
format leaving the selected item with the changed format as desired.
This is getting really frustrating and time consuming to count on selecting
Undo after every formatting change.
Any ideas?

Format > Style > Modify. Clear the Automatic Update checkbox.

Uncheck the 'automatically update' checkbox in the format style dialog.
