word aplpies formatting changes to all document

When I highlight a text to make it bold or italicise it, Word applies
the change to ALL the document, which then appear as bold. The only
thing I've found I can do is press undo (or ctrl z). Is there anyway I
can de-activate the option that makes it do this?

Use PasteSpecial.
