i'd like to create a heading where the text of the heading sits on a grey
bar (ie shading pattern grey 20%) that extends across the entire row. i
cant figure this out for the life of me. i can only get it to grey until
the end of the word rather than across the page. thanks!

Hi, Rob. Select the heading paragraph, then click on Format | Borders and Shading | Shading tab | <select the color you want>.

Garfield's method is probably best, but for some graphic purposes an
alternative is to put a filled rectangle behind the text. Select Rectangle
from the Draw toolbar, anchored to the header.

Make sure you apply the shading to the paragraph, not just the text.
