When I highlight some text to bold it, the whole document goes bold until I
hit the undo button.

Also, how do I change just the font for envelope delivery and return address
and have word remember it?  I hit the default button and it globally changes
the normal.dot template.

Any suggestions would be most appreciated.  Thank you.

For the first question, see
http://word.mvps.org/FAQs/Formatting/WholeDocumentReformatted.htm

For the second, isn't this what you want? Clicking the Default button
changes the font for all new envelopes; that is, it changes the Envelope
Address or Envelope Return style, whichever you have selected at the time.

Modify the Envelope Address and Envelope Return styles and check the
box in the Modify dialog for "Add to template".
