Why does whole document layout changes when I change only one word

I have a Word document which gets me very frustrated. If I make a single word
bold, or apply numbering to one sentence, the whole document becomes bold or
is being numbered.

It seems that Word thinks I want to change the complete profile when I apply
a layout change to a single phrase or word. I have tried to turn off all
autocorrect options, but this does not help.
