I would not change the default because doing so could have unintended
consequences, unless you also type labels and envelopes and contracts on
5-1/2 x 8-1/2 paper. Save your thank you note as a custom document template.
Then use File > New to create new documents based on it. You could also put
a shortcut to that template on your desktop or in your Start menu. For more
on the different kinds of templates, tabs on the file new dialog, and
