Why is it so hard, impossible, to delete a blank page at the end of a document?

Most like you have an empty paragraph on that obstinate last page. If
there is a table on your intended last page it "must" be followed by a
paragraph mark. If the table takes up all of your last page then that
paragraph mark is forced to a new page. Try selecting the empty
paragraph and formatting with font size 1 or shorten your final table.
