I need to find out how to print multiple documents with
each of the 1st pages on letterhead (from tray #1) and the
subsequent pages on normal paper from a different tray
(tray #2).

Also, do I need to add the destination printer to my
defaults?

Any help would be appreciated.

Thanks

Set this on the Paper or Paper Source tab of Page Setup.
