How can one add lines to a table in a protected Word form?

You can't, as long as the form is protected (that's what "protected"
means). You have to unprotect the document, add one or more rows, and
protect the document again. This is best accomplished with a macro,
similar to the one at
http://word.mvps.org/FAQs/MacrosVBA/SpellcheckProtectDoc.htm.
