has anyone ever had a problem embedding an excel worksheet and it appearing
in word as a picture?

Problem in what sense? 'as picture' is one of the PasteSpecial options.

If you follow the menu system for embedding an object it
will appear as a picture.  I find the most relliable way
is to create a field (shift F9) and just type in the
command eg {LINK Excel.Sheet.8 "WORKBOOK.XLS" "Sheet!
R1C1:R43C41" \p }  look in the Word help inder Field
Codes:Link and it will give you all the syntax, etc.
