How do I turn off auto-captialize in a cell of a table?

Tools>AutoCorrect>AutoCorrect tab.  Uncheck Capitalize
first letter of sentences.

Sean,

Not sure.  When I answered your post I was at work using Word2000.  Here at
home with Word2002 and Word2003 there is a separate AutoCorrect option for
capitalizing table cells.

It will likely affect the entire document, but you should be able to switch
the option back and forth.
