Does/will the new 2007 Microsoft Office Add-in: Microsoft Save as PDF or XPS
let you read existing PDF files in word too or is another reader needed?

In the Word 2007 this feature is referred to as "Publish as PDF or
XPS" and it is not possible to load a published PDF back into Word. In
order to read a published PDF you will need another reader.
