So I'm setting up protected documents with form fields. The text box form
fields have a greyish background color. Without destroying the field (copying
the bookmarked data value and pasting it over the control to replace it), is
there a way to remove the grey background for printing? Thoughts/ideas
appreciated.

Are you talking about a color you assigned to the text or the color Word
uses to identify fields?
If the latter, you do not have anything to do, it will not print.
If the former, use a character style to assign the color you want on the
screen, then before printing, change the color attribute of the style,
print, then re-assign the original color.
