You should be able to use the "Menu or Toolbar button" method here:

I'm not sure that you can literally "change" it--I don't see a way, but you
can easily recreate it. Or you can rename the new macro with the old macro's
name.

Are you trying to intercept one of Word's built-in commands. If so, then
