You can protect individual sections, if you protect for forms from the tools
menu, but whether this will allow you to do what you want is another matter.
Protection incurs some limitations on what can be done in a document. If you
want to maintain usability you should consider a different approach - eg
macrobutton fields http://www.gmayor.com/Macrobutton.htm or userforms Word

insert your data.
