how do i create a template with editable fields

I am atempting to create a templated proposal where our sales staff can edit
only specific fields.  I would like to be able to type in client name and
have all the company name fields adjust. But at the least have the sections
that are specific to each client apparent to streamline the process of
creaing a proposal.
