On sheet 2 column A you are allowed to enter values from a drop down, what I
want to be able to do on sheet 1 is count the number of times each of these
options appear.

Imagine yo have a worksheet with 2000 rows.  Moving the right scroll
bar down takes you to the 2000th row.
But if you remove or delete the last 1000 rows, when you use the
scroll bar to move to the end of the worksheet, yo still go to the
