I have Office 2007 beta 2 client installed on my machine . Now If I dont have Sharepoint Server is it still possible to view the form in browser. If yes can I fill it and store in any database locally?

I am trying to make a formula out of two datepickers in a form. People filling out the form are to choose from and to dates from two different datepickers. After that I have a box where I want the number of dates to sum up. What kind of formula should I use and how do I do this?
