How do i setup my outlook to remember the e-mail addresses?

I've tried looking up answers here but when I press the thread I can only see
the first note/questions - none of the responses below.
OL2003 with Exchange (current version)
I have 2 users A and B. In User A I have selected Contacts, InBox, and Tasks

Somehow, all of the category headers in my all of email folders got changed a
couple of days ago. I'd like to know if there's a way to reset them all to
how I had them, without having to do it one at a time.

I used to use Lotus Notes and there was the option when sending an email to
file the sent email into a folder (in addition to it being placed in the sent
folder).  I have been unable to find a similar feature in Outlook.

Outlook just started askinf for a disc to load Outlook Small business, I
have been running it for years.  What happened?

Mail -> Advanced options -> check names is *not* checked, yet I can't send
an email with out going through the check names dialog and, even worse,
cancelling the dialog cancels the email as well. Is there a way to just send
an email without these annoying features kicking in?

I archived my inbox for a specific period of time to a pst file on my network
and not where it naturally archives.  And now I need a sent email in the
file.  I do not necessarily want to restore the whole file, but how do I find
this email?

I am using Microsoft Outlook 2000, and have acidently deleted some of
my important mails from my inbox, (not my pst folder), using Shift +
delete. As I work on a remote server, so we donot have "RUN" also to
use the usual steps of recovery of permanently deleted mails.
