Simply cannot do it.  From Word, if you follow the
Wizard, you'll get into an endless loop regarding the
selection of the Contacts folder in your Outlook.  From
there, you never get the ability to refine your list,

When creating a new email - I hit the "to" button and my
contacts show up, but in addition to their email
addresses their fax numbers also show up as an option.
