Is it possible to link to a video with a text link in PP? I know I can insert/embed in a slide, but I'm wondering if I can link to it so that it doesn't have to be played as part of the presentation - but can be chosen if desired.

I received a PowerPoint presentation in slide show format. It runs continuously. How do I access individual slides so that I can save them separately? I've tried the right mouse options - they all have to do with running the presentation, and nothing more.

Since office 2003 you can secure a presentation by using IRM (Information Rights Management). You can access it by choosing File - Permission - Restrict permission as... which prompts you to download some software and is apparently free of charge.
